10 cup milk
1 cup sugar
2 teaspoon vanilla essence
1 tablespoon nutmeg powder
5 egg
5 tablespoon fresh cream
3 teaspoon brown sugar
2 pinches cinnamon
Break the eggs in a large bowl, one by one. Now, add sugar along with brown sugar and whisk well. You should ideally use an electric mixture or a hand blender because this is going to take some time and a bit of your effort. You must ensure that the mixture becomes light and frothy and the sugar is completely dissolved.
Now, take a pan and add half the quantity of milk in it, and bring it to a boil. Allow it to simmer on low flame till the milk is reduced to half. At this point, add the sugar and egg mixture. You must keep stirring continuously or the eggs will curdle. You must keep the flame low and ensure that the mixture does not stick to the bottom of the pan. If it happens the taste of your drink will spoil completely.
Now, remove this from fire and allow it to cool slightly. Pour it now in a large bowl. Add the remaining milk and whisk well so that the milk combines with the custard. Next, add the vanilla essence, nutmeg powder and cinnamon powder and mix well. You must always add the spices and the essence at the end of the cooking process. It is important because the aroma goes away if you boil the spices and essence for too long.
Finally, add the cream and whisk again. You may use an electric blender or whisker to give a frothy effect. Keep whisking till stiff peaks are formed. Now cover with a cling film and refrigerate for 3-4 hours. Pour in glasses and sprinkle nutmeg powder. You can serve the eggnog chilled or warm. If you are serving it warm, add some brandy or mulled wine for a memorable taste.
