Cranberry Pumpkin Cake Christmas Special

420 gm pureed pumpkin
450 gm all purpose flour
1 1/2 cup sugar
1/2 teaspoon salt
1/2 cup chopped walnuts
1 cup chopped cranberries
1 teaspoon baking soda
2 egg
1/4 cup canola oil/ rapeseed oil


Take two big bowls. Mix flour, baking soda, sugar and salt in the first and pumpkin puree, eggs and oil in the second. Now you have got two separate mixtures- a dry one in the first bowl and a fluid one in the second. Now pour in the fluid mixture into the dry one, stirring all the while so it takes the form of a batter. Sprinkle chopped walnuts and thawed cranberries into this batter.

Grab hold of two loaf pans and coat them with cooking spray. Fill these pans with the prepared mixture equally and bake at 177 degrees Celsius for approx 1 hour and 10 minutes. Check once by inserting a toothpick in the centre of the cake. If it comes out clean, then your cake is properly baked.

Let the cakes sit for 10 minutes before removing from the pans so that they come out easily. Now remove the cakes from the pans and place them on the cooling racks.


Ensure that the pumpkin puree you use does not have any added spices.
