Prawn with Lemon Quiche

Ingredients

-210 gm prawns
-1 tablespoon chopped dill leaves
-4 egg
-1/4 cup low fat milk
-15 gm grated parmesan cheese
-4 tablespoon chopped green onion
-1 teaspoon grated lemon rinds
-2 filo sheets
-1 tablespoon virgin olive oil
-2 tablespoon ground green pea split

Directions

- Preheat the oven to 180°C.

- In bowl, add clean prawns, green onions, pea paste, dill and grated lemon rinds. Mix well to combine. Heat 1 tbsp oil in a pan and cook this mixture in it until the prawns are cooked.

- Place 1 filo sheet on a flat surface. Spray with oil. Place the other filo sheet on it and again spray with oil. Roll the sides a bit to make a pastry puff.

- Place the pastry puff on a baking tray. Whisk the eggs, grated parmesan cheese and milk in a bowl. Pour it all over the pastry puff and bake it for 35 minutes.

- Once baked, place the cooked prawns on it and serve hot.
